- Preheat the oven to 350°F.
- Grease a 9x13 baking dish.
- Mix the cake mix, butter, milk, eggs, and vanilla extract in a large mixing bowl until smooth.
- Bake for 25-30 minutes, or until a toothpick inserted into the centre comes out clean, in the prepared pan.
- Allow the cake to cool completely before crumbling it into a large mixing bowl.
- Mix in the strawberry jam until well combined.
- Form the cake mixture into 1-2 inch balls with a small cookie scoop and place them on a baking sheet lined with parchment paper.
- Freeze for 30 minutes after inserting a lollipop stick into each ball.
- Melt the white chocolate chips with the heavy cream and vegetable oil in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Dip each cake pop into the melted white chocolate, allowing excess to drip off.
- If desired, top with sprinkles.
- Return the cake pops to the parchment-lined baking sheet and refrigerate for 15-20 minutes, or until the chocolate is set.
